After a few years of vinification in other Alentejo wineries, Fitapreta found its winery in Paço do Morgado de Oliveira, a 14th century renovated Medieval Palace, 10 km from Évora and less than an hour and a half from Lisbon. It displays perfect fusion between the past and the future, a medieval palace and modern architecture, where a newer cork building was built in 2017, where the red wines are made. In the older medieval palace the white wines are made and all wines are aged in French oak barrels. Some of the Palace rooms are also used for wine tastings, courses, and other events, such as music concerts.
There are still several buildings on the estate that are currently being restored or still need to be, and the recovery and restoration is being done respecting history and always with archaeological assistance. So far some beautiful frescos have been recently discovered as well as what is believed to be the oldest winery in Évora. Fitapreta has a beautiful tasting room overlooking the vineyards, with several tables and a bar that makes it an ideal place for wine tasting at the end of a visit.
With around 100 hectares of vines, Arinto, Baga and Tinta Miúda are examples of the grape varieties planted on the wine estate. The remaining vines are in various areas between Evora, Redondo, Borba and Fronteira and some are not very far from the Ossa mountains (Serra d’Ossa), where the vineyard has been producing wine uninterruptedly since the 14th century.
